Christmas Cheer

<<What's Cooking? Main

Three recipes to set the mood for Christmas.

Plum Cake

Ingredients:
1 cup butter
1 cup sugar
6 eggs
125 gm almonds-chopped
2 tsp vanilla essence
2 ½ cups Mixed fruits-chopped
2 cups all purpose flour
An 8” round baking pan.

Method:

Mix the chopped fruit and almonds with 2 tbsp of the refined flour and keep aside. Cream butter, sugar, eggs and vanilla together. Fold in the flour and then the fruit mixture. Transfer mixture into the prepared pan and bake in a pre-heated oven for 50-60 minutes.

Boiled Custard

Ingredients:
1 1/2 cups sugar
1/4 cups flour
1/8 tsp salt
8 egg yolks
6 cups milk
2 cups light cream
1 tsp vanilla extract
1/8 tsp nutmeg
1 1/2 cups whiskey (optional)

Method:
Mix sugar, flour, and salt in heavy 6-qt saucepan. Add egg yolks and mix well. Using wire whisk, stir egg mixture and slowly pour in milk and cream. Cook over low heat, stirring constantly, until custard is thickened
and just coats the back of a wooden spoon. Remove from heat and let cool. The custard will thicken as it cools. When cold, stir in vanilla, nutmeg, and whiskey.

Hot Mulled Apple Cider

Ingredients:
1 qt. apple cider
8 whole cloves
2/3 cups packed brown sugar
1/4 tsp. each nutmeg and ginger
1 stick cinnamon

Method:
Combine all ingredients in 1 1/2 quart sauce pan. Cook until brown sugar is dissolved, stirring constantly. Simmer, covered, for 10 minutes; strain. Serve hot in cups. Garnish with lemon slices and cinnamon sticks for stirring.
