Atukulu (Poha) Laddu

2 Cups thin atukulu (poha)
½ Teaspoons cardamom seeds (ilachi)
1 Cup light brown sugar
1 Cup fresh grated or frozen coconut (unsweetened)
½ Teaspoon Ghee (optional)

In a dry frying pan fry poha in low heat for three minutes, Let it cool and blend poha and cardamom seeds together until they become coarse ravva. 

Mix all the above ingredients and ghee with hand until you are able to make balls. Taste the mixture for sweetness and make small lime size balls. Makes about 12 balls.

Note: If you are using frozen coconut, spread the coconut on doubled paper towel and microwave it for 30 seconds to remove some moisture.

My mother used to make this laddu during Dasara holidays, when the school children came door-to-door singing Dasara songs.
This is very easy to make. Looks like ravva laddu.  
 

Mysore Pak



1 Cup chana flour (besan)
3 Tablespoons hot oil
1 3/4 Cups sugar
½ cup water
1 ½ cups ghee (clarified butter) keep it hot in a small pan
8 x 8 inch square metal pan

Mix chana flour and hot oil thoroughly in a wide bowl. Sieve it to remove any balls. 

Make syrup by mixing sugar and water in a non-stick pan. Boil the syrup for three minutes and reduce the heat to medium high mixing continuously until it is thick. Put one drop of syrup in a small plate of cold water. If it becomes a ball, that means the syrup is ready. 
Pour chana flour in to the syrup mixing continuously making sure not to have any lumps. Add hot ghee once in a while until the sugar mixture starts to have bubbles and ghee starts to come to the edges. This mixing must be very fast and continuous. At this time while it is bubbling, pour the mixture (Mysore pak) in to the metal pan quickly. Let it settle by itself. Do not spread it manually. Leave it to cool for 15 minutes. 

With a sharp knife cut the Mysore pak into one inch wide and two inches long pieces. The pieces should have light brown color in the middle and yellow color on top and bottom. Arrange them nicely in a serving plate.
