Three luscious recipes made out of the fleshy, healthful tropical fruit.


Banana French Toast

Ingredients:

8 slices of bread
2 ripe banana 
1 cup all purpose flour
2 tsp vanilla
2 tbsp sugar
1/2 cup milk or as needed
Oil or butter to fry
Powdered sugar (optional)

Method:
In a blender place banana, flour, sugar, vanilla. Blend smooth and then add enough milk to make a batter consistency. Dip both sides of the bread in the batter to coat evenly. Fry in hot oil or butter, turning once to brown each side nicely. Watch carefully as this tends to burn easily. Drain on paper toweling and serve immediately. Dust with powdered sugar if desired.


Banana Split

Ingredients:
1 oz square semisweet chocolate
2 tb light corn syrup
2 tb sweetened condensed milk
1/8 ts vanilla ice cream
1 tb unsalted, roasted peanuts
1 small banana, quartered

Method:
Place chocolate in a 2-cup measure. Micro-cook, uncovered, on 
100% power for 1 1/2 to 2 minutes or till melted, stirring once. 
Stir in corn syrup and sweetened condensed milk. 
Micro-cook, uncovered, on 100% power for 30 to 45 seconds or till 
heated through. 
Stir in vanilla. Serve warm atop ice cream. Sprinkle with peanuts. 
Arrange quartered banana around ice cream.
 

Banana Raita

Ingredients:
7 fl oz natural yogurt
½ tsp cumin seeds
½ tsp wild onion seeds
2 dessert spoons chopped cilantro
1 banana, sliced

Method:

Place yogurt in a bowl. Beat gently with a fork until creamy. Heat a frying pan and lightly roast the cumin and onion seeds. Add these to the yogurt, then add the remaining ingredients. Mix well and chill before serving.
